Blini with white fresh cheese, chives and anchovies
Preparation time: : 30 min
For blinis: 150g Greek yoghurt, 1 egg, 100g of flour, 1 bag of baking powder, a pinch of salt.
For the garnish: 250 g of white fresh cheese, a small bunch of chives, olive oil, 4 salted anchovy fillets à la Provençale as a finisher.
Mix all the blinis ingredients together, leave to refrigerate for 1 hour.
Lightly oil a blinis pan or a non-stick skillet. Heat them over medium heat, then cook the blinis, pouring small ladles of the dough.
When you see the holes in the blinis, return them and keep them warm.
Whisk the fresh cheese, the small bunch of chopped chives, a drop of olive oil and the salted anchovy fillets, finely chopped, and add pepper.
Place the cream of fresh cheese on the blini and place salted anchovy fillets on top.
