Blini with white fresh cheese, chives and anchovies

For blinis: 150g Greek yoghurt, 1 egg, 100g of flour, 1 bag of baking powder, a pinch of salt. For the garnish: 250 g of white fresh cheese, a small bunch of chives, olive oil, 4 salted anchovy fillets à la Provençale as a finisher.

Preparation mode

  • Mix all the blinis ingredients together, leave to refrigerate for 1 hour.
  • Lightly oil a blinis pan or a non-stick skillet. Heat them over medium heat, then cook the blinis, pouring small ladles of the dough.
  • When you see the holes in the blinis, return them and keep them warm.
  • Whisk the fresh cheese, the small bunch of chopped chives, a drop of olive oil and the salted anchovy fillets, finely chopped, and add pepper.
  • Place the cream of fresh cheese on the blini and place salted anchovy fillets on top.
